Apple Cinnamon Bread

What's better than sweet, gooey apple bread? Sweet gooey apple bread with a cinnamon swirl lacing through it. This is one of those "Well, maybe just one more slice" cakes. Folks love it.


Spice breads and sweet loaves of all kinds have been fun for me to make since I was a little kid. This is a more recent recipe than most, using fresh apples baked into white cake with a cinnamon swirl. Simple, rustic and so delicious.


I use Cup 4 Cup gluten-free flour for every recipe here on my site. Feel free to switch it out for what flour or any combo you prefer.









1/3 cup brown sugar 1 tbsp brown sugar


1/2 cup butter, softened 2/3 cup sugar

2 eggs 1 tbsp vanilla

1 1/2 cups flour

1 tbsp baking powder

1/2 cup milk (dairy, almond or coconut) 1 apple peeled and chopped fine (I use Honeycrisps for this, on the east coast try Empires)


Preheat oven to 350 butter and flour a loaf pan (9x5 or two mini pans) With an electric mixer, cream the butter and sugar Add the eggs one at a time, beating until smooth add the vanilla and baking soda, incorporating well. Stir flour into wet ingredients, and add milk until smooth. Pour 1/2 the cake batter into prepared loaf pan, top it with half the apples and 1/2 the cinnamon brown sugar mixture. Repeat with remaining batter, apples and cinnamon. Gently Swirl the apples and brown sugar into the top of the batter with a fork or spoon.

Bake 40 minutes in center rack until a fork or toothpick comes out clean.
