Fast, delicious, healthy....I can't get enough.

Eating healthy doesn't have to mean giving up sumptuous or decadent feeling food. This is a perfect example. It reminds me of breezy, balmy Summer night meals at bustling NYC Bistros, that have all gone away.... sadly, now turned into a Duane Reade or banks. But, capture a bit of fun, luxe, slightly decadent, yet still healthy, supper fare. (this is also my go to for salmon) 4 ingredients. Fresh Cod filets ghee sea salt 21 Seasoning Salute (I know, I'm obsessed, for easy quick meals) A bit lower than medium heat in a carbon steel or cast iron pan (please don't use non-stick)


Let the ghee get good and warm. Season and drop in the fish, skin side down.

Turn once, a couple minutes on each side. Fin. (what I did there...)
