Mint Lime Chutney

A small tweak on a classic.

Tiny tweaks, I'm talking small.

I love this stuff so much and realized it's now a favorite thing to put on potatoes. (and tots! Try it....trust) Of course it's fantastic with naan, and roast meats and veg.

Ready? Let's go.









Makes about 1 1/2 - 2 cups



Ingredients

  • 2 cups fresh cilantro, packed

  • 1 cup fresh mint leaves, packed

  • 1/4 medium onion

  • 1/4 cup water, more as needed

  • 2 tbsp fresh lime juice (or lemon)

  • 1 tsp sugar

  • 1 tsp salt

  • 1 tsp fresh Thai chili, OR 1/4 tsp red chili flakes Optional: 1 heaping tbsp honey several dashes rice wine vinegar



 





Toss everything in a blender and blend until it has a nice texture.

Add water and adjust seasonings to taste.

Note: I left mine a bit more liquid, but you can also add more ingredients if you want it more of a paste for rubs, for chicken or lamb, or to use in stuffed dishes.
