Roasted Cherry Tomatoes and Onions

We all know the baked feta trick, but honestly, my favorite part is the bite of the sweet, tart, juicy, rich, tomatoes and onions.



Onions as sweet as candy with those varying shades of caramelization and flavor. You can use these on pasta, polenta, crostini, grilled cheese, omelets, baked caprese (yes!).....the list goes on. So here's this decadent yet healthy flavor bomb.

Easy, gorgeous, sublime.









Prep: 5 min. Cook time: 30-40min


INGREDIENTS:

2 pints cherry tomatoes washed

2 medium onions sliced thin

2-3 tbsp olive oil

1 tbsp 21 Seasons Salute (or seasoning of your choice, like fresh rosemary & thyme, Italian seasoning.... go off! Just make sure you're not double salting with your spice mixes) 1/2 tsp garlic powder (or 2 cloves minced)

salt & pepper


DIRECTIONS:

  • preheat oven to 375

  • add tomatoes and onions to a half sheet tray or large baking dish

  • add olive oil, top with garlic, salt, pepper and spices, and stir or toss to coat

  • roast in middle rack of oven for 30 mins or until onions get as caramelized as you like. (I like them golden, sticky and sweet, so it's more like 40-45 mins...yeah, baby!)

  • serve in any way that suits your fancy, (warm or room temp) or eat them right from the tray...... be wild, live a little!
