Tenderloin Is The Night
Perfectly juicy, crisp, pork tenderloin? Yes. Here it is.

The best part is, it's fast and easy, as well as being incredibly delicious.
Let's roast.
prep time 5 min. cook time: 35 minutes serves: 2-4
Ingredients:
1 pork tenderloin
1 tbsp olive oil 1 tsp salt
1 tsp garlic powder 1 tsp curry powder 1 tsp 21 Seasons Salute 1/2 tsp pepper
1/2 tsp coriander dash cinnamon (these are all approximate, so you do you)
Directions:
preheat oven to 400 degrees
preheat oven-ready skillet with 1 tbsp oil on med high heat (I use a carbon steel pan)
mix all spices together in a bowl or dish big enough to season the tenderloin
pat dry tenderloin well, with a paper towel
rub tenderloin with oil, then dredge in spice mixture and coat thoroughly
sear tenderloin in skillet on all sides
place skillet in oven and roast for 25-30 minutes until desired doneness.
remove from oven, baste, and let rest for 10 minutes
slice into one inch sections, and serve. Delicious!
Serve with roast root vegetables seasoned with a similar mixture. Sautéed Swiss chard is also a great side dish.
